Cornmeal-Crusted Tilapia Sandwiches

A Weight Watcher's recipe

Coleslaw
3 tbsp light mayonnaise
1 tsp minced chipotle chile, canned in adobo sauce
(I opt out of the chipotle business)
3 cups packaged cabbage-and-carrot coleslaw

Fish
3 tbsp yellow cornmeal
1/4 tsp freshly ground black pepper
4 (3 oz) tilapia fillets
1/8 tsp salt
1 tbsp canola oil
4 (1.8 oz) white-wheat hamburger buns

Directions:
(I generally skip the coleslaw)
Combine mayonnaise and chile in a large bowl; add cabbage-and-carrot coleslaw, and toss to coat. Set aside.

Combine cornmeal and black pepper in a shallow dish. Sprinkle fish with 1/8 tsp salt; dredge in cornmeal mixture.

Heat oil in a 10-inch cast-iron skillet over medium-high heat. Add fish; cook 2 to 3 minutes on each side or until fish flakes easily when tested with a fork.

Divide fish evenly between buns. Top with coleslaw mixture.

Serves 4

Southwestern Egg Salad

Another Weight Watcher's recipe

6 whole hard-boiled eggs
2 medium scallions, finely chopped
1 tsp. cilantro, fresh, minced
1/2 small sweet red pepper, finely chopped
1/4 cup fat-free mayonnaise
1 tsp salsa
1/4 tsp ground cumin
1/4 tsp salt
1/8 tsp black pepper

Directions:
Peel eggs, mash with a fork in a large bowl. Add remaining ingredients and mix throughly to coat.

Serve egg salad in a colored bell pepper, or on its own in a bowl. (Or as a sandwich!)

Taco sloppy joes

This one we just made up one night.

1 lb lean ground turkey
1 packet taco seasoning
1 16 oz jar of salsa
Shredded lettuce
Low fat shredded cheese
Low calorie/high fiber hamburger buns

Brown the ground turkey.
Add the taco seasoning.
Add salsa to you reach the sloppy joe consistency that you prefer.

Serve on buns with lettuce, cheese etc.
YUM!

Country Salisbury Steak

I think this one came from a Kraft Food magazine

1 1/2 lb extra lean ground beef (or turkey)
1 pkg (6oz) stuffing mix for chicken
1 1/2 cups water, divided
3/4 cup chopped onion
1 pkc (8oz) fresh mushrooms, sliced
1/2 cup BBQ sauce

*Preheat oven to 375. Mix meat, stuffing mix, 1 1/4 cup water and onions until well blended. Shape into 6 patties. Place on a 15X10 baking pan.
*Bake 25 minutes or until cooked through.
*Meanwhile, spray large nonstick skillet with cooking spray. Add mushrooms and cook on medium-high heat 5 minutes or until lightly browned, stirring occasionally.
*Add BBQ sauce and remaining water. Reduce heat to low and simmer until sauce thickens (1-2 minutes.)

Serves 6

Mexican Sloppy Joes

Another one of my favorite WW recipes.

Cooking spray
1 lb 93% lean ground turkey breast
One 14.5 oz can stewed tomatoes with jalepenos
One 8 oz jar black bean and corn salsa
Bag of baked tortilla chips
Fat free sour cream

*In a large skillet coated with cooking spray, brown the turkey breast over medium heat.
*Add the stewed tomatoes with jalepenos and the jar of black bean and corn salsa. Cook for about 10 minutes, stirring often.
*On each of 4 plates, place 1 ounce (about 12) baked tortilla chips, then top with ¼ of the meat mixture.
*Top each serving with 1 Tbsp sour cream.

Serves 4

Sloppy Joes

A Weight Watcher's Recipe

1 lb lean ground sirloin
1/2 cup diced onion
1 cup barbecue sauce (such as KC Masterpiece)
1 Tbsp white vinegar
1/2 cup water
2 1/2 tsp prepared mustard
5 reduced calorie hamburger buns

Cook beef and onion in a large nonstick skillet over medium-high heat until browned.
Add sauce, vinegar, mustard and water; reduce heat an dsimmer 7-8 minutes until slightly thick, stirring occasionally.

Serves 5

Southwestern Egg Salad

This one is a Weight Watcher's recipe, I believe

6 Whole hard boiled eggs
2 Medium scallions – chopped
1 tsp canned green chilis
1 Tbsp cilantro – minced
½ Small red bell pepper – chopped
¼ Cup fat free mayonnaise
1 Tbsp salsa
¼ tsp ground cumin
¼ tsp salt
1/8 tsp pepper

Optional: 4 bell peppers, or 4 tomatoes, or sandwich bread,
or salad greens.

*Peel eggs.
*Mash eggs with a fork in a large bowl.
*Add remaining ingredients and mix thoroughly.
*Serve in a cored bell pepper, or a cored tomato, or as a sandwich, or on a salad…

Serves 4

Monte Cristos

This is a lightened up Rachel Ray recipe.

8 Slices bread
8 Slices fat free cheese
12 Slices thinly sliced ham
12 Slices thinly sliced turkey
2 Tbsp hot pepper jelly
3 Egg whites
2 Tbsp hot sauce
Dash of salt and pepper
Nonstick spray

*Lightly beat egg whites with hot sauce, salt and pepper.
*Spread jelly on 4 slices of bread.
*Top each piece of bread with 1 piece of cheese, 3 slices of ham and 3 slices of
turkey.
*Top sandwiches off with another slice of cheese and a piece of bread.
*Spray a skillet with nonstick spray and set over Medium High heat.
*Dip sandwiches in egg mixture to coat both sides then cook 3-4 minutes per side until cheese is melted.

Serves 4

Salmon Burgers with Peach Salsa

One of my long time favorite WW recipes.

2 Large peaches – chopped
1 Medium jalapeño – seeded, chopped
1 tsp lemon juice
1 ½ tsp sugar
1/8 tsp salt
2 Tbsp cilantro – chopped
1 can (14 ¾ oz) red salmon – drained
1 Medium scallion – finely chopped
2 ½ tsp lemon zest
1 Large egg – beaten
¼ tsp pepper
3 ½ Tbsp dried bread crumbs (whole wheat)

Salsa:

*Combine peaches, jalapeño, lemon juice, sugar, salt and cilantro. Stir gently to mix. Refrigerate while preparing burgers.

Salmon Burgers:

*Preheat broiler

*Combine salmon, scallion, lemon zest, egg, pepper and bread crumbs. Mix well. Shape into 4 patties.

*Coat a broiler pan or baking sheet with cooking spray and broil patties 4 inches away from heat 2-3 minutes per side (or until golden brown and crispy.)
